We are Alessandro and Arianna, and we run a small farm in Mombarcaro, in the heart of Alta Langa. Pascoli di Amaltea was founded in 2007 from our shared passion for farming, animal husbandry, and the honest production of food. Inspired by the principles of regenerative agriculture, we raise around one hundred sheep and goats, while our apple orchards provide natural shade for the animals grazing in the pastures. We produce raw milk cheeses, apple cider, and honey—thanks to our beehives, which also play a vital role in pollinating the apple blossoms. Our production follows the rhythm of the seasons. In keeping with Langhe tradition, our cheeses are made from spring to autumn, with flavors and aromas that change depending on the grasses in the pastures and the time of year.
