We are a family-run mill based in Cossano Belbo, in the Langhe—the land of renowned writers Cesare Pavese and Beppe Fenoglio. Since 1956, we have been producing high-quality flours, certified organic since 1997, combining tradition and innovation. Our production includes both roller-milled flours (Type 0 and Type 00) and stone-ground flours, using ten natural stone mills that preserve the authentic character of each grain. We are committed to safeguarding biodiversity throughout the entire supply chain—from the careful selection of cultivation areas across Italy, where cereals thrive naturally with low yields per hectare, to the milling process itself. Here, each grain is processed according to its intrinsic characteristics, ensuring that its nutritional properties remain intact while preserving the flour’s natural flavors, aromas, and colors.
