L'Albero delle Galline is a patisserie, chocolate shop, café and ice cream parlour based in Bossolasco, Alta Langa. We, Isabelle and Sebastien, are behind it all. Pastry chefs for 25 years, partners in work and in life, we worked in prestigious European pastry laboratories before starting a new chapter in our lives and opening our own pastry shop in Bossolasco.In our work and in our products we combine tradition and innovation, precision and craftsmanship. We seek continuity and, at the same time, great freedom of expression. We create parfaits, pastries, cakes, biscuits, sponge-based cakes and much more. We use seasonal or locally inspired ingredients to bring our ideas to life and create perfect sweet treats to match every minor or major celebration. And then there is chocolate in its many variations, from classic pralines to the ""Sorrisi di Bossolasco"", as well as thick, creamy hot chocolate. Worth mentioning is the hazelnut cake, made with the ""round gentle"" variety from the Langhe, prepared by hand according to tradition. Finally, the leavened products, freshly baked and nearly all made with our mother yeast. They are perfect to start the day well along with a good cup of coffee.
