It is 2017, we are at Alberto's house in the middle of one of our usual evenings to spend time together, just as we did as children. We like to talk about old times and our childhood. And so we pick up one of those classic memory boxes, which no one has opened in years, and the first thing that catches our attention is an old recipe book. It is not difficult to identify it, it is the recipe book of the legendary Aunt Luigina, Alberto's great-aunt, but a bit of an aunt to us all. We begin to leaf through the book and we are taken back to a past of memories, of scents and good flavours of cakes, pastries and biscuits, a long series of sweet treats described in detail in those particular recipes. All the pastries are closely entwined by a single ingredient: hazelnuts, just like those hazelnuts we used behind Aunt Luigina's house. We spend the evening remembering how fond Aunt Luigina was of that book of pastries, the same ones that Langa women like her used to prepare in the humble kitchens of a very poor area, the Malora, using few ingredients but lots of love and imagination, and succeeded in creating delicious recipes. Shortly afterwards, the desire to turn these memories into reality was born: it is with this spirit that Golosalba, an artisanal laboratory of hazelnut delicacies, was created. Our pastries are meant to be a snapshot of the past. Close your eyes and imagine that you are savouring genuine sweet treats, made with care, embodying the deliciousness of wholesome ingredients, triggering a family memory and being reminiscent of the cosy scent of the kitchens of bygone days.
