There is a place where slowness is a source of pride and being a snail means to be in the spotlight, just like a star. The eulogy to slowness takes place in Cherasco where, since 1971, the Istituto Internazionale di Elicicoltura (International Institute of Heliciculture) has been operating with the aim of enhancing the breeding and marketing of snails. The age-old tradition of going for snails after every rainstorm has become a business and economy for an entire area, and today it sets the standard and dictates the rules for sustainable and organic farming, without waste, where everything is transformed and nothing is thrown away: a circular, or rather helical, system that has become a business of excellence. Snails are anything but new in the hills of Langhe Monferrato Roero and have always enhanced the local cuisine. Poor in lipids, but with a high percentage of noble proteins, they were a good supplement in times when buying meat was not within everyone's reach. In time, snails were no longer a necessity, but their charm, deliciousness and characteristic of being a 'superfood' with a high nutrient content became well-known to all, and made them a sought-after dish. On top of this, research has highlighted its infinite beneficial properties to the extent that today, snail slime is widely used in medicine and cosmetics.
