We have all dreamt of inventing something that does not exist. Each time it seems that everything is already there, especially when you want to experience a new flavour. This is what happened to two friends who, on a warm summer evening in 2012 in the Roero hills, tried their hand at a creative chat. The goal: an innovative, non-existent product that would allow them to enter the wine and food market in an original way. Requirements: a strong connection with the land, with the culture of the place, yet not the grapevine. So, they looked around and, perhaps, it was at that very moment that they spotted a pear, beautiful, healthy, firm and pot-bellied. A Madernassa, one of those pears that are as rare as they are prized by great chefs. A syrup? A marmalade? Too obvious. Maybe a pear sparkling wine, a totally new and unconventional fermented drink. As a result, in 2014, Sidré was born, a sparkling wine, produced using the Charmat method, dry, with a fruity aroma and low alcohol content. A product that appeals to young palates and is establishing itself as an aperitif or lounge bar drink. It is also an excellent pairing with hors d'oeuvres, white meats and vegetables. The 'drinkable pears', thanks to the desire to experiment, have also become a beer, Pera Madernassa beer: praised as much as Sidré and considered by experts as one of the most innovative products in the vast world of Italian fermented beverages.
