In Capriglio there used to be a castle that is no longer there, yet there is still a prince, who is also quite ancient. He is not a ""prince charming"" and does not ride horses, on the contrary, he is red, sometimes yellow, and has deep roots that make him well rooted to his land: we are talking about the highly prized and unique pepper, obviously from Capriglio. It is a vegetable that has been cultivated for over two centuries, whose seeds have been handed down from generation to generation and which differs from the other pepper varieties grown in the Asti area, due to its small size and its 'heart' shape given by the three fleshy, tasty ribs. The very thick shape of the pepper berry and the inflections that make it particularly crispy and sweet on the palate also make it ideal for any dish and for raw consumption. This kind of pepper is also particularly suitable for preservation under marc, the ancient technique of placing whole, selected peppers, still with their stalks, inside demijohns in a solution of boiling water, vinegar and salt, and then cover them with marc from the pressing of local wines. A month or so of waiting and the ''Peperoni di Capriglio sotto raspa'' (Capriglio peppers preserved in marc) this is the name with which they will be presented to you, will be ready to be eaten. A preparation that allows the product to be preserved until spring. After opening, the peppers will have to be eaten within the next fortnight, but their deliciousness means that there is no risk of failure.
