They are thin wafers prepared with simple ingredients that are shaped using a special ancient iron: these are the traditional Canestrelli of Cinaglio, a biscuit that for centuries the families of this small Monferrato village have been preparing for special occasions. No wedding, birth, engagement or feast day was ever celebrated without this special biscuit, which is thin, crumbly, but very tasty. Even today, during the patron saint's festival of S. Felice, at the end of August, the Sagra del Canestrello (""Canestrelli Festival"") is dedicated to these typical biscuits. Families compete for the annual prize by submitting their canestrelli recipe to a jury of expert tasters, who will announce the winner of this mouth-watering competition by awarding a cash prize. A simple recipe using butter, flour, yeast, sugar, egg yolks and, if desired, vanillin and rum, products which make a compact, soft dough that is then placed on traditional cast iron griddles to be cooked on typical country stoves.
