It is a long and sweet story. A story that, as often happens, merges with legend. We are talking about the Baci di Dama (Lady's kisses): that crumbly and tasty moment of pure pleasure that has brightened the days of its connoisseurs for over two centuries. Butter shortcrust pastry, hazelnut flour and dark chocolate are three of the ingredients, but their blend, combined with the art of shaping the material, gives rise to this delicious, fragrant, golden treat whose recipe is handed down from generation to generation. That odd craving for something good that suddenly overcomes a king and a brigade of court confectioners who strive to find the perfect cake: this is what legend has it. The King in question was Victor Emmanuel II and the court of course the Savoy. You can almost see this gluttonous king summoning his cooks to his palace on a foggy day, asking them to prepare a new treat. As always, they did not disappoint him and amidst flour puffs, handfuls of sugar, hazelnut flour, eggs and chocolate, the 'Bacio di Dama' was born. Perhaps it was a last-minute idea to join the two halves of the biscuit together with a thick chocolate cream, but the fact remains that the 'kiss' is liked for its taste and romantic features.
