It is a gem that is not worn, but tasted. It is the Alba White Truffle, one of the world's most prized products and the undisputed king of Langhe Monferrato Roero cuisine. Its biological cycle is tied to very precise environmental conditions: it lives in symbiosis with certain tree or shrub plants and exchanges nutrients with them. Moreover, unlike the mushrooms we see sprouting from the ground, which can use the reproductive spores by dispersing them in the wind, this extraordinary underground miracle has devised a very effective way of guaranteeing itself progeny: it produces an irresistible scent that attracts insects and mammals that, charmed by this aroma, feed on it and spread its spores. It is the scent that is the basis of a quality truffle and allows the trifolau and especially his trusty dog to track it down and deliver it onto the tables of its admirers. There are many mysteries behind every ""trifola"": namely an amazing nature whose perfection is impressive, and the mysteries carefully guarded by those who bring these jewels to light. It is no coincidence that Unesco has decided, in December 2021, to include ""truffle hunting and extraction in Italy"" on the list of the Intangible Cultural Heritage of Humanity.
