BIRRIFICIO EDFIL

Situated in a panoramic position between the Nizza and Taglione Valleys, Birrificio Edfil was born in 2012 in Regione Dogliano, a small hamlet of Agliano Terme, a thermal centre in the heart of the Asti region renowned for its salso-magnesian waters and Barbera wine. The Craft Brewery was created by Silvia Castagnero, her husband Daniele Mori and her brother Giovanni. The management of beer production, on the other hand, is entrusted to her son-in-law Gabriele Ormea, an experienced and award-winning master brewer. Edfil's beers are agricultural and artisanal, made exclusively with barley produced on the farm: to this end, Silvia has reserved more than two hectares of the family property for the cultivation of this cereal. Only raw materials of the highest quality - such as hemp, chestnut honey or grape must - grown on the farm or rigorously purchased locally are used in the production of the beers. Every step of the brewing process, from milling to bottling, is carried out in house: only the malting of the barley is entrusted to Cobi (Italian Consortium of Barley and Beer Producers), a cooperative of farmer-brewers from the Marche region. They are unfiltered and unpasteurized beers, inspired by Belgian, Anglo-Saxon and American breweries, although special attention is paid to exceptional ingredients like hemp and must, made from grapes grown on the farm.
